Vegan French Onion Soup

2 medium size onions

1 tbsp. olive oil

3 cups water

1 1/2 tbsp. Bragg Liquid Aminos

4 slices vegan cheese (mozzarella/provolone type)

Homemade croutons

Fresh ground black pepper to taste

Homemade croutons: Cut 4 slices of millet or whole grain bread into small bite size pieces. Let sit for at least an hour and then place in skillet with 1 tbsp. olive oil. Brown on both sides. Remove and set aside until needed.

Cut onions into thin slices. Sauté in olive oil until carmelized. In small saucepan boil water and add Bragg. Pour water and Bragg into French onion soup bowls, add onions and croutons. Top with cheese slices and place under broiler in oven. Broil until cheese is golden brown. Serve with baguette and vegan butter. Enjoy!
