Phenomenal Tasting Tofu Guacamole Wraps

2 large whole wheat tortillas

8oz extra firm tofu (sprouted if possible)

1 tbsp. olive oil

1/2 - 1 tbsp. Bragg Liquid Aminos

1/2 large red bell pepper (thinly sliced)

1 large very ripe avocado

1/2 cup freshly chopped cilantro

Juice from 1/2 lime

Salt and pepper to taste

Rinse tofu and squeeze out excess water. Pat dry with a cloth and cut into long finger-sized pieces. Sauté tofu pieces in olive oil until golden brown on all four sides. Remove from pan, pour Bragg over top and let cool down, leaving to marinate.

Mash avocado and add freshly chopped cilantro, lime and salt and pepper. Spread mashed avocado generously onto tortilla, add sliced red pepper and tofu fingers.

Roll up tightly and slice in half. Each tortilla serves one.
