Spectacular Spinach Gazpacho

Ingredients
1 small cucumber
4 cups spinach
2 cloves garlic
1 scallion
1/2 cup cilantro
2 cups cold water
1/2 tsp salt
1/2 tsp pepper
Dash of cayenne (optional)
Blend all ingredients in a Vitamix or any high powered blender until smooth and creamy. Serve with millet toast and vegan butter.
