Seriously Delicious Potato Pancakes

Ingredients:

3 lbs yellow, red or white potatoes (avoid russet for this recipe as they are very dry)

1 large red bell pepper (chopped)

2 medium size onions (finely chopped)

1/2 cup fresh cilantro (finely chopped)

1/4 cup all purpose flour

1/2 cup soy milk or any type of nut milk

Olive oil as needed for frying

Salt and pepper to taste


Rinse potatoes and cut into small pieces. Place in water and boil until potatoes are soft and easy to mash.

While the potatoes are cooking chop bell pepper, onions, and fresh cilantro.

Sauté onions in skillet with olive oil until translucent, add bell pepper and continue to sauté for two minutes. Add cilantro and sauté for another 30 seconds.

When potatoes are soft, drain water and mash them. Add the onions, peppers and cilantro mixture.

Mix the milk and flour together making sure that there are no lumps. Add to the potato mixture. Form into patties and place on grill or in a pan with a little olive oil and grill until golden brown.
