A tasty breakfast favorite...Scrambled Tofu

1-16oz pkg. extra firm tofu (sprouted, if possible)
1 medium onion
1/2 cup frozen peas
1 tbsp. olive oil
1 tsp. turmeric
Salt & pepper to taste
Sauté onions in oil until translucent.
Rinse tofu and pat dry with clean cloth squeezing out excess water. Crumble tofu with hands into sautéed onions. Continue cooking for 5 minutes.
Add turmeric, peas, salt & pepper and simmer for another 2 minutes.
Enjoy with millet toast and vegan butter.
