Roasted to Perfection Potatoes with Creamy Vegan Sauce


3 or 4 yellow or red potatoes

6 scallions (chopped)

Olive oil

Salt & pepper

Place potatoes between two wooden spoons and thinly slice them.

Brush liberally with olive olive making sure to get the oil between slices.

Sprinkle salt & pepper and scallions on top and between slices.

Bake at 400° for 1 hour.

Remove from oven and let cool for 5 minutes. Serve with creamy vegan sauce.

Creamy Vegan Sauce

4 tbsp. veganaise (or any vegan mayonnaise)

1 tsp. Dijon mustard

1 tbsp. finely chopped fresh cilantro

1/2 tsp. black pepper

1 tsp. paprika

1/2 tsp. garlic powder

Mix all ingredients together and let sit for at least 15 minutes before serving.
