Pasta with Tempeh "meat" Sauce and Fresh Grated Vegan Parmesan

1-16 oz pkg. pipe rigate pasta (or any type you prefer)

1- 8oz pkg. tempeh

1 onion finely chopped

1/4 cup olive oil

I-16oz can tomato sauce

1/2 cup fresh chopped basil or 1/2 tbsp. dried basil

Salt and pepper to taste

Crumble tempeh in 1 tablespoon of the olive oil and chopped onion and sauté for about five minutes while stirring frequently.

Once the onions are translucent and the tempeh is a little golden add the basil, tomato sauce, salt & pepper and olive oil.

Simmer on low heat for 15 minutes.

Pour sauce over pasta and grate fresh vegan parmesan on top.

*You can find vegan parmesan cheese at WF market and other natural foods stores. My favorite brand is comes in a stick and you can grate it yourself for fresher flavor.
