Pasta with Creamy Vegan "Alfredo" Sauce and Steamed Broccoli

Ingredients:

8oz pasta cooked el dente

1/2 cup raw cashews

1 cup soy milk

2 cups broccoli florets

1/2 cup fresh chopped cilantro or 1 tsp. dried cilantro

1/4 cup nutritional yeast

2 cloves garlic

1 tbsp. olive oil

Salt & pepper to taste


Cook pasta according to package directions.

In a saucepan combine soya milk, cashews, nutritional yeast, garlic, olive oil and salt & pepper.

Cook over medium heat for 5 minutes.

Pour into high powered blender and blend until creamy.

Pour mixture back into saucepan to reheat and pour over pasta.

Lightly steam broccoli florets and add to pasta and sauce.

Mix together and serve hot!
