Mushroom Spinach Flatbread

Ingredients:

1 large flour tortilla

2-3 tbsp. tomato sauce

1 1/2 tbsp. olive oil

1 small onion (thinly sliced)

Handful of baby spinach

1- 8oz pkg. Bella mushrooms (or any type you prefer)

1/2 cup vegan cheese (shredded)

Saute onions in saucepan with 1/2 tbsp. olive oil until carmelized.

Remove from pan and set aside.

Sauté mushrooms in same saucepan with 1/2 tbsp. olive oil until golden brown. Set aside.

Brush tortilla with 1/2 tbsp. olive oil.

Spread on tomato sauce.

Add spinach, onions and mushrooms.

Sprinkle with shredded cheese (optional).

Bake at 400 degrees for 15 minutes and place under broiler for another 5 minutes to melt cheese.

Slice and enjoy.
