Mediterranean meets Mexican ... Rosemary Garlic Potato Wedges with Spicy Guacamole

6 medium size potatoes

2 tbsp. olive oil

4 cloves fresh garlic (chopped)

2-3 sprigs fresh rosemary or 1 tbsp. dried rosemary

Salt and pepper to taste

Cut potatoes into wedges. Place in large bowl and add remaining ingredients. Toss potatoes until fully coated with oil and spices. Place wedges in large baking dish and bake at 400 degrees for 1 hour or until potatoes are soft enough to eat. Serve with guacamole for a new taste sensation.


2 ripe avocados

1/2 red bell pepper (finely chopped)

1/2 small onion (finely chopped)

4 cloves garlic

1/2 cup fresh cilantro or 1/2 tbsp. dried cilantro

Juice from 1/2 fresh lime

1/2 tsp. cayenne

1/4 tsp. salt

1/4 tsp. pepper

Mash avocado and add remaining ingredients. Mix thoroughly and let sit for 10 minutes before serving.
