Healthy “Ramen” Style Noodles

1 portion size organic millet & brown rice noodles

2 cups water

1-1/2 tbsp. Bragg Liquid Aminos

1 tsp. chopped fresh cilantro or 1/2 tsp. dried cilantro

1/8 cup frozen peas

2 stalks baby bok choy

1/2 tbsp. olive oil

Boil water and add noodles, cooking for 2-3 minutes. Turn heat to low and add remainder of ingredients. Add pepper to taste. Pour in bowl and let sit for 2 minutes. Garnish with cilantro. Enjoy with whole wheat toast and vegan butter or whole grain crackers.
