Deliciously Sweet - Sugar Free - Banana Nut Loaf
3 bananas (over ripe)
2 1/4 cups all purpose flour
1/2 cup coconut oil (melted)
1/4 cup unsweetened soy, almond or any plant based milk
3/4 cup chopped walnuts
1 tsp. vanilla
1 tsp. apple cider vinegar
1 tsp. baking soda
1/2 tsp. salt
24 drops stevia
Mash bananas thoroughly, and mix together with milk, oil, vanilla, stevia and apple cider vinegar.
Mix all dry ingredients together and add to banana mixture. Add walnuts.
Pour into baking dish, coated with coconut oil, and bake at 350 degrees for 1 hour.
Cool for 30 minutes before removing from baking dish.
Place in plastic wrap and refrigerate. Can keep for up to 1 week. Also delicious served warm.
