Curry Garbanzo Salad/Sandwich Spread

1 can garbanzo beans

I medium carrot (finely chopped)

2 stalks celery (finely chopped)

1/2 cup fresh chopped cilantro

1/2 cup frozen peas

1/2 red bell pepper (finely chopped)

2-3 tbsp. Veganaise (or any vegan mayonnaise)

1 tsp. Dijon mustard

1/2 tsp. garlic powder

1 tsp. curry powder

1/4 tsp. cayenne

Salt and pepper to taste

Drain water from garbanzo beans and slightly mash in a bowl, leaving some beans whole.

Add remaining ingredients and blend together.

Let sit for about 20 minutes before serving.

Can be served on plain or toasted whole grain bread to make a tasty sandwich.
